Peanut Tempeh Lettuce Wraps

This budget dish serves 2 (but you can easily scale it up) and it takes under 15 minutes. For an even cheaper dish, you can substitute tofu for the tempeh (cube and fry; no need to steam).

Ingredients: 

200g tempeh
1/2 head round lettuce, divided into leaves and cleaned
1 red pepper, diced
1/4 cucumber, halved lengthwise and sliced
1/4 cup sweetcorn
1 spring onion, sliced
2 tbsp peanuts, chopped

For the peanut sauce:

2 tbsp peanut butter
1 tbsp soy sauce
1 tbsp hot sauce (or to taste)
1 tbsp maple syrup

Directions: 

1. Steam the tempeh until tender, and then cut into chunks. 
2. Mix the peanut sauce ingredients. 
3. Place the lettuce leaves on a plate and top with the red pepper, cucumber, and sweetcorn. 
4. In a frying pan with a little spray oil, fry the tempeh until lightly coloured. Add 1/4 cup water and the peanut sauce, and stir to coat. 
5. Top the lettuce and vegetables with the tempeh, and sprinkle with peanuts. To eat, roll the leaves around the filling and enjoy!

Vegan Sushi

You won’t believe how easy this is to make until you try it. If you’re not used to rolling sushi, we recommend you watch an online tutorial.

Ingredients:
1.5 cups sushi rice
3 tbsp rice vinegar
2 tbsp maple syrup
large pinch salt
1/4 cucumber, cut into batons
1 carrot, cut into batons
1 bell pepper, any colour, cut into batons
4 sheets roasted nori

Directions:
1. Cook the rice according to package directions.
2. Heat the rice vinegar, maple syrup, and salt in a small saucepan until combined.
3. Lay a sheet of nori on a clean kitchen towel, shiny side down. Wet a spatula and layer rice evenly across the nori, leaving an inch of nori free from rice at the top edge.
4. Make a line each of carrot, cucumber, and bell pepper down the middle of the nori.
5. Use a towel to roll the sushi tightly from the bottom up. Wet the top edge with a pastry brush dipped in water, and seal.
6. Cut with a sharp knife, wetting it between cuts.

Cucumber-Parsnip Lemonade

Don’t let the title dissuade you: this is a flavoursome, sweet drink that doesn’t taste at all like blended vegetables. It’s cooling and refreshing, and as a bonus it contains no refined sugar. The recipe serves 1.

Ingredients

1 apple (2 apples if you have a very sweet tooth)
1 pear
1/4 cucumber
1 inch ginger
1 parsnip
1/2 inch slice lemon

Method

Juice all ingredients and enjoy.
