Peavocado Toast

Peavocado Toast! It’s our new favourite lunch: the peas give a creamy sweetness to the dish and contrast with the acidity of the balsamic vinegar. This is a filling lunch, and a great post-workout refueller! It serves 2.

Ingredients: 

For the peavocado purée:
2 avocados
1 cup peas (defrosted if frozen)
1 large bunch basil
1 clove garlic
2 tbsp nutritional yeast
Pinch chilli flakes
Salt and freshly ground black pepper
1 tbsp lemon juice

For the tomatoes: 
1 clove garlic, minced
Salt and freshly ground black pepper
2 tsp olive oil (optional) 
2 tbsp balsamic vinegar
2 large tomatoes, sliced

Everything else: 
4 slices bread, toasted

Directions: 
1. Purée all the peavocado ingredients in a food processor or blender.
2. Meanwhile, mix the garlic, salt and pepper, olive oil, and balsamic vinegar, and pour over the tomatoes. Heat a large frying pan over a medium low heat. Add the tomatoes and cook each side until slightly softened and coloured. 
3. Make the toast. Top with avocado and tomatoes, and enjoy.

Crustless Tofu and Vegetable Tart

Bound to be a winner for lunch or breakfast, this tart is sett on the outside and slightly creamy inside. It’s filled with vegetables and potatoes for for plenty of colour, texture, and flavour.

Ingredients:

For the Vegetables:
2 medium potatoes, peeled and finely diced
1 red bell pepper, finely diced
1/4 cup sun-dried tomatoes, finely diced
10 black olives, finely chopped
1 bunch asparagus, in 1 inch pieces
4 green onions (scallions) chopped
1 cup spinach, minced
1 bunch basil, minced

For the Tofu:
400g tofu, drained and pressed
2 tsp onion granules
1 tbsp garlic powder
1/2 cup aquafaba (liquid from can of chickpeas)
1 tsp smoked paprika
1 heaped tbsp yellow miso
1 tsp turmeric
1/4 cup nutritional yeast
1 tbsp cornflour
3 tbsp plain flour
2 tbsp chickpea flour

Directions:
1. Preheat oven to 180C. Oil a loose-bottomed cake tin.
2. Sauté the potatoes until browned. I used the air fryer at 200C for 15 minutes, tossing midway through.
3. Add the potatoes and vegetables to a large bowl.
4. Mix the tofu ingredients in a food processor. Stir into the vegetables and mix well to combine.
5. Transfer the mixture to the cake tin, and even off the top. Sprinkle with plenty of black pepper.
6. Bake in the oven for 30 minutes. Cover with foil, and bake 40-50 minutes more, or until set (check with a knife inserted into the centre; there will be a little residue on the knife, but the tart shouldn’t be too wet). Serve and enjoy.

Fennel and Mushroom Penne in a Lemon and Garlic Sauce

Delicately fragrant, vivid, and lively, this comforting gluten-free dish is full of nutrients. Eat your fill!

Serves 2

Ingredients

1 leek, finely chopped
250g mushrooms, sliced
1 fennel bulb, quartered and finely sliced
150g tenderstem broccoli (substitute with broccoli florets if tenderstem is hard to find)
5 sage leaves, finely minced
Small bunch each basil and parsley, minced
200g brown rice pasta
2 large handfuls baby spinach

For the sauce

50g white beans of choice
150g silken tofu, drained
Zest 1 lemon
Juice 1/2 lemon
3 garlic cloves, peeled and minced
1 tbsp nutritional yeast flakes
1/4 cup unsweetened, unflavoured all-plant milk of choice (soy milk used here)
Salt and freshly ground black pepper to taste

Directions
1. Steam the fennel and broccoli until just tender (about 5 minutes).
2. Meanwhile, cook the pasta according to package directions, drain, reserving 1 cup of cooking liquid, and rinse to remove the excess starch.
3. Sauté the leeks and mushrooms over a medium heat in a non-stick pan until softened (about 5 minutes). Add the sage.
4. Blend all the sauce ingredients. Taste and adjust seasonings if desired.
5. Add the sauce to the leeks and mushrooms vegetables, thinning out to desired consistency with a little of the reserved cooking water. Toss in the pasta, fennel, and broccoli to warm through.
6. Serve the pasta on a bed of spinach, garnished with a little extra lemon zest, more black pepper, and the minced basil and parsley.

Sweet Spinach, Pea, and Basil Smoothie Bowl

A deliciously healthy smoothie bowl made with ingredients that you can find in your local supermarket. Don’t worry; this doesn’t taste like vegetable soup: the flavours of the fruits are dominant.

Ingredients:

For juicing

1/4 cucumber
1 slice pineapple
1 apple
1 kiwi fruit

For blending

2 frozen bananas
Large handful spinach
Large handful frozen peas
Handful oats
15-20 basil leaves

For decorating (suggestion)

Fresh, dried, or frozen fruit
Nuts and seeds
Coconut flakes
Suitable for vegan muesli or granola

Directions:
1. Juice the pineapple, cucumber, apple, and kiwi.
2. Add to the blender with the bananas, spinach, oats, peas and basil. If the mixture is too thin, add more oats or frozen peas. If too thick to blend, add a little more liquid (all-plant milk would be suitable).
3. Pour into a bowl (or two, depending on desired serving size), and serve decorated according to taste.

“But I Can’t Cook” Lentil Bolognese

About 10 minutes to put together. Cheap as chips. If you can open cans and jars and set a kitchen timer, you can make this. Serves 2.

Ingredients

150g dried spaghetti
1 x 400g can green or brown lentils
1 x 400g can chopped tomatoes
1 tsp garlic powder
1 tsp dried thyme
1 tsp dried parsley
1 tsp dried oregano
1 tsp dried basil
2 tsp balsamic vinegar
2 tsp salt (1 tsp for the spaghetti water; 1 tsp for the sauce)
1 tsp maple syrup
A few handfuls of baby spinach

Directions

1. Boil a kettle full of water. Transfer it to a large saucepan over a medium-high heat and sprinkle in one of the tsp of salt. Add the spaghetti, and set the kitchen timer to the time advised on the packet.
2. Add the rest of the ingredients to a smaller saucepan. Simmer on low until the spaghetti is cooked.
3. When the spaghetti is cooked, drain.
4. Add the sauce to the spaghetti. Taste, and promise never to tell yourself that you can’t cook again.

Spinach and Basil Orzo Stew

A 20-minute easy meal with a side of sweet roasted tomatoes; you’ll be glad you made this when you see how little washing-up there is. It serves 2-3.

Ingredients

250g cherry tomatoes on the vine
1 yellow pepper, medium dice
2 tsp Italian herbs
Salt and freshly ground black pepper
1 onion, fine dice
3 cloves garlic, minced
250g orzo
3 cups vegetable stock
1 x 400g can tomatoes
100g baby spinach
½ tsp suitable-for-vegans sugar
1 tsp balsamic vinegar
15 g basil leaves, torn

Directions

1. Preheat the oven to 220C. Line a baking tray with a silicone sheet. Toss 125g of the tomatoes and yellow pepper in 1 tbsp vegetable broth, and sprinkle with salt, pepper, and 1 tsp of Italian herbs. Transfer to the oven and roast for 15 minutes. Remove the yellow peppers after 15 minutes, and roast the tomatoes for 5 minutes more.
2. In a large saucepan, sauté the onion over a medium-low heat for 2 minutes until just softened. Add the garlic for 30 seconds more, and deglaze the pot with about 1/4 cup of the vegetable broth. Add the orzo, the rest of the broth, the remaining de-vined tomatoes, the canned tomatoes, the sugar, and the balsamic vinegar, and simmer 8-12 minutes, stirring frequently, until cooked.
3. Stir in the spinach, yellow pepper, and basil until the spinach is wilted. Serve with the roasted tomatoes.

Tofu Pesto Spread

Although this spread is ideal for crusty bread, it also makes a wonderful stuffing for pasta shells. It’s incredibly simple to make: just put all of the ingredients into a blender or food processor.

Ingredients

1/2 block extra-firm tofu (about 170g), crumbled
1 cup toasted pine nuts or raw macadamia nuts
1 cup spinach leaves, tightly packed
Large bunch basil
Juice 1/2 lemon
2 tsp white or yellow miso
1/4 cup nutritional yeast
1 tsp sea salt, or to taste

Method

Pulse all of the ingredients in a food processor or blender, stopping occasionally to scrape down the sides if necessary. Don’t overprocess; you want the finished product to have some depth of texture from the nuts.
